My guess is 250D Fuji Or Kodak.. is there anyone who can suggest some tips?

Kodak Vision3 250D would be my choice.

You are correct. Both are quite flexible. I don't know what kind of look you are going for but, you can protect the shadows a good deal with out loosing the highlights.

Kodak 500T with an 85 gives you an extra 1/3 stop over 250D, and when the light drops you can pull the filter and shoot at 500asa

Yes, but your grain bump is appreciable.

Unless you are intercutting with slower stock, the increase in grain should be barely noticeable, and the additional speed may be the difference between making the day or not.
