In camera or post prod color correction?

Hello!

Will be shooting my first short film/tvc next week. I wanna start the film with very warm feel and high saturated colors. As the story gets gloomy and sadder, I want the look colder and desaturated. I will be using the HVX200.

Would it be wise to grade it in camera while shooting or should I shoot at zero levels and adjust the colors in post?
