Animation or CGI over a shot?

I've been asked to shoot a film where the director wants to have a shot that shows evolution of a forest. It will grow from a feild of grass to a full forest.

In shows like Adaptation when we see the eveolution, is that all animation? Or is there some actual footage there thats being morphed? There are no actors in this shot, just plants and trees growing. Would I grab a plate shot of a feild and another of the forest and leave the rest to post? How would I go abouts prepairing for something like that?

Any suggestions would be helpful.
