I really like "The Conversation" commentary by Walter Murch (of course he is my favorite editor) but I really haven't come across too many dvds with good editor commentary, or even a editors commentary at all.

So Im wondering what have you all come across that you've enjoyed?

You should try to find the Criterion DVD for "Traffic." Stephen Mirrione talks about 3 or 4 scenes from the film and shows you his actual Avid timeline as he goes over why he made certain editing decisions etc.

I love the commentary on "Dark City" with Roger Ebert. He covers just about everyone's job and how it contributed to the film.
