Time-Lapse w/ a HV30

I need to get some shots of buildings in Russia against the sky. For extra drama, I would like to do it in time-lapes with the clouds flying by. I am using a Canon HV30 but in going through the manual I don't see how you can do time-lapes. Got any ideas?

Any software program will do this. FCP, Avid, Premiere etc.
