Canon 5D Mark ll low light in Black and White

Hi

I am researching the possibilities of shooting on the 5D in very low light conditions, however I really want to do it in Black and white and at night when the streets are empty. Its a music video, but im not gonna bore you with details.

I'm going to be shooting at an ISO rating of about 4000 - 6400 and converting to anamorphic, and leaving the lens wide open and to complicate matters further, weighting the camera to pop onto my steadicam for 5 of the shots.

I worked with a DOP a while ago and we shot most of his film on the same camera with candle light... but can I get this same beauty everyone raves about in B/W.

Its low budget and its my first gig as a DOP. If there is any advise out there please help.
