I think you could do a pretty killer final fight in Raging Bull, complete with dolly-zoom and off speed work.

I like Chris' idea but it sounds ambitious and in need of talent and art. I was thinking the swing scene from The Thin Red Line. There are a few memorable scenes from the movie that might me re-creatable.

always remember to turn your liabilities into your assets

bad
you have a loud, small 16mm camera with a marginally usable viewing system, and probably some okay lenses, dunno

good
variable frame rate
single frame capability
light
easily mounted/ flown
inconspicuous
doesn't need batteries
easily inverted

etc. make your own list and work from there

include your resources regarding sets, light, actors as well

more suggestions:
pogo cam chase scene from POINT BREAK
shower scene from PSYCHO
closet scene from BROKEN BLOSSOMS
walking scene from POINT BLANK, Lee Marvin
trio on the run in JULES AND JIM
use the dorms and elevators for the overlook hotel in THE SHINING
the DO Long Bridge sequence at night from APOCALYPSE NOW. (kidding)
but you could do the poop, still in saigon opening....

let us know what you decide. The fights from RAGING BULL sounds best, even if you stage it outdoors w no extras, just copy the moves and focal lengths and frame rates and you will get an A

no one expects you to marshall a cast of thousands
