hi!

I'm trying to find out how can I make a 360 degree shot, bird's eye view, with the red.

the shot is the typical where the character is in a bed and we are on the top, getting high with him or feeling everything in movement.

an example of this is in the movie " enter the void" (is in netflix, in stream) minute 8:00

anybody know how can I do it?

An underslung Ronford F7 head attached to a long paddle from the dolly will get you this shot. I have also seen scaffold rigs used when the paddle isn't long enough. If you need to be super wide, then some sort of lightweight hot head could be used instead of the F7.
