DSLR to make a "Microcosmos"ish movie.

First of, I am very new into making movies, so please bare with me!

I will get a Nikon D800 this spring, and plan to use its video function to make something "Microcosmos:ish". I read that Microcosmos was shoot on 35mm film, does that mean I get the same DOF with my 35mm DSLR camera? When I viewed the movie the DOF seems rather big. The POV seems to wide for being a macro lens, almost like they used a wide-angle macro lens. What kind of gear should I use to get smooth pannings?
