My company just bought some 2k's and they came without edisons, so we had to order those separately. The vendor gave us 15 amp edisons, and while I'm fairly sure it is standard to use 15 amp edisons on 2k fixtures, I can't quite wrap my head around how/why it is safe.

Because the blades in the 15A edison are exactly the same thickness and current carrying capacity as in the 20A.  A true 20A edison, Hubbell, cap would have one blade 90 degress to the other and only fit in a matching 20A receptacle, preventing it from being used on any circuit not specifically wired for 20A.
